Stir Fried Shiitake Mushroom and Tofu

    This is a great option for when a vegan friend comes around; it is also nutritious and very tasty making a great side dish.

    Serves: 2 

    • 3 dried shiitake mushrooms
    • 1 1/2 tablespoons oil
    • 250g firm tofu, cut into bite sized pieces
    • 1 carrot, thinly sliced
    • 1 teaspoon light soy sauce
    • 1 teaspoon cornflour, mixed with 2 teaspoons water
    • 1/4 teaspoon salt

    1. Soak the mushrooms in warm water until soft. Remove, rinse and thinly slice. Strain the soaking liquid and reserve 3 tablespoons.
    2. Heat the oil in a frying pan. Stir fry the tofu until golden. Remove and set aside. Reserve the oil in the frying pan.
    3. Heat the same frying pan until hot. Stir fry the mushrooms and carrots.
    4. Add the tofu and gently stir. Stir in the mushroom soaking liquid and cook for 2 minutes.
    5. Stir in the soy sauce and cornflour slurry. Cook until the sauce has thickened. Season with salt and serve.


    Dried shiitake mushrooms can be purchased in Asian speciality shops.
