This is a flavoursome and hearty Chinese soup with a wide range of ingredients including shiitake mushrooms, bamboo shoots, ham and bok choy.


Serves: 4 

  • 1 1/2 litres chicken stock
  • 2 teaspoons vegetable oil
  • 50g fresh shiitake mushrooms, thickly sliced
  • 50g tinned sliced bamboo shoots
  • 50g ham, cut into strips
  • 100g baby bok choy, cut into thick slices
  • 200g soft tofu, thickly sliced
  • 1 teaspoon salt
  • 1 pinch ground white pepper
  • 1 teaspoon coarsely diced coriander

Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

  1. Bring the chicken stock and oil to the boil in a large saucepan.
  2. Add the mushrooms and bamboo shoots then bring back to the boil.
  3. Add the ham and bok choy then bring back to the boil.
  4. Add the tofu and cook until they float.
  5. Season with salt and white pepper. Transfer to a serving bowl and garnish with coriander. Serve.
