If you are looking for something a little bit different this may be for you, dried rose petals are soaked and the soaking water combined with maltose and red wine to create a chicken marinade.


Serves: 4 

  • 15g dried rose petals
  • 150ml hot water
  • 100g maltose
  • salt, to taste
  • 2 tablespoons red wine
  • 16 chicken wings, rinsed, patted dry and cut at the joints

  1. In a bowl soak the rose petals in the hot water for 10 minutes. Remove the petals and keep the soaking liquid.
  2. In a bowl mix together the maltose, salt and the rose liquid. Allow to cool. When the mixture is cold add the red wine and stir.
  3. Add the wings into the sauce and marinate in the refrigerator for at least 4 hours.
  4. Preheat the oven to 220 degrees C. Line a baking tray with foil.
  5. Take the wings out of the marinade (save the sauce for basting) and arrange onto the prepared tray.
  6. Bake for 10 minutes. Turn the wings over and baste with the sauce. Bake for 10 minutes or until thoroughly cooked. Serve.


Maltose can be purchased in Asian speciality shops or online.
