Calamari with Sun Dried Tomato

    The quick cook time is the key to a tender calamari in this recipe that uses garlic in olive oil to create a subtle flavour in this simple entree.

    • 1 tablespoon olive oil
    • 8 calamari, cleaned and sliced
    • 3 garlic cloves, peeled and minced
    • 50g oil-packed sun dried tomatoes, diced
    • 1 teaspoon diced flat leaf parsley

    1. Heat the olive oil in a medium frying pan on medium heat then cook the garlic and the calamari for 5 minutes.
    2. Add the sun dried tomatoes and it's ready. Sprinkle with parsley to serve.
