Stir Fried Cucumbers

    A single serve vegetarian dish made from cucumbers, they are stir fried with Szechuan peppercorns and soy sauce then served with hot chilli oil.

    Serves: 1 

    • 250g cucumbers
    • 1 pinch salt, to taste
    • 3 tablespoons cooking oil
    • 1/4 teaspoon Szechuan peppercorns
    • 1 1/2 teaspoons soy sauce
    • 1 tablespoon hot chilli oil

    1. Cut the cucumbers in half longways, remove the seeds and cut into 5cm long thin strips.
    2. Combine the cucumbers with salt and set aside for 2 minutes. Rinse with cold water and drain.
    3. Heat the oil over high heat in a wok until hot. Add the peppercorns and stir until fragrant.
    4. Add the cucumber and stir fry for 30 seconds.
    5. Add the soy sauce then toss well.
    6. Transfer to a serving dish and drizzle in the hot chilli oil. Mix before serving.


    If your local supermarket doesn't stock Szechuan peppercorns you can find them in Asian speciality shops.
