Stir Fried Mushrooms

    This stir fry is for all mushroom lovers, this version uses shiitake mushrooms and button mushroom but you can add whatever mushrooms you desire.

    Serves: 2 

    • 1 teaspoon cornflour
    • 2 tablespoons reserved mushroom soaking liquid
    • 1 1/2 tablespoon vegetable oil
    • 50g dried shiitake mushrooms, soaked until soft, sliced
    • 250g button mushrooms, thickly sliced
    • 1 tablespoon soy sauce
    • 1 pinch salt, to taste
    • 1 teaspoon sugar
    • 1 teaspoon sesame oil

    1. Mix together the cornflour and mushroom soaking liquid. Set aside.
    2. Heat the oil in a wok until very hot. Stir fry the shiitake and button mushrooms for 5 minutes.
    3. Add the soy sauce, salt and sugar then stir well. Add the cornflour slurry and toss to coat.
    4. Drizzle with sesame oil and serve.


    Dried shiitake mushrooms can be purchased in Asian speciality shops or online.
