Salmon Baked with Garlic and Dill

Salmon fillets are bathed in a paste of garlic, dill and olive oil before being baked in the oven to create a mouth watering fish dinner.


Serves: 6 

  • 1 head garlic, peeled
  • handful chopped fresh dill
  • 100ml olive oil
  • 1 1/2 kg salmon fillets
  • salt and freshly ground black pepper, to taste

Preparation:10min  ›  Cook:15min  ›  Extra time:2hours marinating  ›  Ready in:2hours25min 

  1. In a food processor, process garlic to a rough mince, then add the dill and olive oil and pulse a few times to combine.
  2. Lay fish fillets in a baking dish, skin side down. Rub garlic mixture over fish. Marinate in the fridge for 2 hours.
  3. Preheat oven to 190 degrees C.
  4. Bake in preheated oven for 15 minutes. Do not overcook.


Try this preparation with any type of fish - red mullet, snapper or cod would work nicely!

Used different ingredients. FANTASTIC. This is a great simple fresh recipe. As per the usual comment, I added a very small red hot chilli(seeds removed) to the marinade and it gave it a fantastic taste without being to hot and overpowering. - 29 Sep 2008


Altered ingredient amounts. Very tasty (if you LOVE garlic!) which we do. I only used 1/2 head garlic, it was about 12 cloves, and the whole pkg. of fresh dill just as called for (30g). I used fresh gound sea salt, and put some lemon juice and some sprinkles of brown sugar (about 1T. total) on the salmon first. Then I topped it with the dill-garlic paste, and let it sit at room temp about 1 hour. Baked @ 200* for 15-20 monutes. It was great. (I pitty the poor people I have to see tomorrow...garlic breath YIKES!!!) - 29 Sep 2008
