Stir Fried King Prawns and Vegetables

    On rush days I make this easy stir fry dish with frozen king prawns, they are cooked with celery and capsicums then served with roasted walnuts.

    Serves: 4 

    • 12 frozen cooked king prawns, thawed
    • salt and pepper, to taste
    • 4 tablespoons chicken stock
    • 2 tablespoons water
    • 1 tablespoon cornflour
    • 1 teaspoon sesame oil
    • 1/2 teaspoon sugar
    • 2 carrots, sliced
    • 5 sticks celery, diced
    • 1 tablespoon oil
    • 1 tablespoon oil
    • 2 tablespoons finely diced garlic
    • 1 medium onion, diced
    • 1/2 teaspoon salt
    • 1/2 green capsicum, diced
    • 55g roasted walnuts

    1. Season prawns with salt and pepper. Let sit for 15 minutes. Then mix with chicken stock, water, cornflour, sesame oil and sugar. Set aside.
    2. Bring a large saucepan of water to the boil. Cook the carrots for 3-4 minutes then add the celery for another 2 minutes. Drain and set aside.
    3. Heat a large frying pan with 1 tablespoon oil over high heat. Fry the prawns until fragrant; 1-2 minutes. Set aside.
    4. Heat the same frying pan with 1 tablespoon oil over high heat. Saute the garlic and onions with salt until soft; 3-4 minutes.
    5. Add the capsicum then cook for 1-2 minutes. Stir in the carrots and prawns.
    6. Quickly mix then turn the heat off and scatter over walnuts before serving.
