Stir Fried Vegetables with Prawns

    The vegetables are the main feature of this stir fry including green beans, carrots, celery and onion. Eight cooked prawns are also added with tomatoes to create a rich tomato based sauce.

    Serves: 4 

    • 125g green beans, diced
    • 65g carrots, diced
    • 125g celery, diced
    • 1 tablespoon oil
    • 1 medium onion, diced
    • 1/2 teaspoon salt
    • 8 cooked prawns, diced
    • 150g tomatoes, diced
    • 4 tablespoons tomato sauce
    • 1 cup (250ml) water
    • 2 tablespoons sugar
    • 1 teaspoon salt

    1. Bring a large saucepan of water to the boil. Boil the green beans, carrots and celery for 5 minutes. Drain and set aside.
    2. Heat a large frying pan with oil over high heat. Saute the onions and salt until soft; 3-4 minutes.
    3. Stir in the green beans, carrots and celery.
    4. Add the prawns then mix well.
    5. Add the tomatoes, tomato sauce, water, sugar and salt then stir well.
    6. Cover and simmer for 1-2 minutes. Serve hot.
