Pork and Mushroom Stir Fry on Noodles

Pork and shiitake mushrooms are stir fried then mixed with a black bean sauce before being served over fresh noodles.

Ingredients
Serves: 4
- 500g fresh noodles
- 1 1/2 tablespoons vegetable oil
- 200g lean pork, finely diced
- 2 spring onions, diced
- 3 dried chillies
- 3 dried shiitake mushrooms, soaked until soft, diced and 4 tablespoons soaking liquid reserved
- 2 tablespoons black bean paste
- chicken stock powder, to taste

- Cook the fresh noodles in boiling water until al dente (about 6 minutes), drain and place into a serving bowl.
- Heat the oil in a wok or frying pan then add the pork and stir fry until the colour changes.
- Add the spring onions and dried chillies and stir fry for 1 minute.
- Add the mushrooms and toss few times. Add the black bean paste and stir fry for 2 minutes over low heat.
- Pour the mushroom soaking liquid in and cover the wok. Simmer for about 8 minutes until the sauce has thickened.
- Season with chicken stock powder. Pour the sauce mixture over the noodles and serve.
Ingredients
Dried shiitake mushrooms and black bean paste can be purchased in Asian speciality shops or online.
