Stir Fried Ham, Green Beans and Bean Sprouts

    As a simple main or side dish this is quick and easy to prepare and tastes great. Blanched green beans and bean sprouts are stir fried with ham, garlic and onion.

    Serves: 4 

    • 3 tablespoons oyster sauce
    • 3 tablespoons water
    • 1 teaspoon sesame oil
    • 1/3 teaspoon salt
    • 1/3 teaspoon sugar
    • 200g bean sprouts
    • 700g fresh green beans
    • 1 tablespoon groundnut oil
    • 1 tablespoon finely diced garlic
    • 1 medium onion, sliced
    • 1 teaspoon salt
    • 10 slices smoked ham, diced

    1. In a small bowl, mix together the oyster sauce, water, sesame oil, salt and sugar to make the sauce. Set aside.
    2. Blanch bean sprouts and green beans in boiling water for 1-2 minutes. Pour into a colander set in the sink and cool with a cold running tap. Drain and set aside.
    3. Heat a large frying pan with oil over high heat. Stir fry the garlic until fragrant; 2-3 minutes.
    4. Add the onion with salt then stir fry until soft; 3-4 minutes.
    5. Stir in the ham, green beans and sprouts and mix well.
    6. Add the sauce and heat through, 1-2 minutes. Serve.
