    A simple scallop dish that features Chinese winter melon. Both are steamed with a slight garlic flavouring then served with a chicken stock sauce.

    Serves: 3 

    • 500g Chinese winter melon, peeled, seeded and cut into 3cm thick slices
    • 250g fresh scallops
    • 2 cloves garlic, finely diced
    • 1 teaspoon salt
    • 2 tablespoons chicken stock

    1. Blanch winter melon in boiling water for about 2 minutes and drain.
    2. Transfer melon on a heat proof dish. Top with the scallops and garlic.
    3. Place the dish into a steamer and steam for about 10 minutes.
    4. Meanwhile, make the sauce by mixing together the salt and chicken stock.
    5. Once the scallops are done drizzle with the sauce and serve immediately.


    Chinese winter melon can be purchased in Asian speciality shops.
    If winter melon is unavailable substitute it with bitter melon but salt for 30 minutes before using.
