Steamed Crabs with Ginger Sauce

    Crabs are simply steamed then served with a homemade ginger sauce with a soy base and Chinese black vinegar.

    Serves: 4 

    • 1 tablespoon sesame oil
    • 1 1/2 tablespoons soy sauce
    • sugar, to taste
    • 1 tablespoon Shaoxing wine
    • 2 tablespoons finely diced ginger
    • 3 1/2 tablespoons Chinese black vinegar
    • 1kg crabs, cleaned

    1. Make the sauce by heating the sesame oil in a small saucepan for 15 seconds. Add the soy sauce, sugar, Shaoxing wine and heat for 15 seconds more. Pour into a bowl and add ginger, set aside.
    2. Pour some black vinegar into a separate bowl and set aside.
    3. Steam the crabs over high heat for 15-20 minutes or until they are cooked through. Transfer to a serving plate and serve with sauce and vinegar.


    Shaoxing wine and Chinese black vinegar can be purchased in Asian speciality shops or online.
