Spicy Prawn and Zucchini Stir Fry

    Prawns are stir fried with zucchini, baby corn, garlic and chilli bean paste to create this delightful Chinese meal. Serve with rice.

    Serves: 4 

    • 10 raw, shell-on prawns
    • salt and pepper, to taste
    • cornflour, as needed
    • 1 tablespoon oil
    • 1 tablespoon oil
    • 1 tablespoon diced garlic
    • 1 medium onion, sliced
    • 1/2 teaspoon salt
    • 3 zucchini, diced
    • 8 baby corn, cut into thirds
    • 3 tablespoons chilli bean sauce (toban djan)
    • 1 tablespoon oyster sauce
    • 1 teaspoon sesame oil
    • 1/2 teaspoon sugar
    • 1 tablespoon water

    1. Season prawns with salt and pepper. Let sit for 10 minutes. Then lightly dust in cornflour.
    2. Heat a large frying pan with oil over high heat. Fry the prawns until cooked; about 3-5 minutes depending on their size. Set aside.
    3. Heat the same frying pan with oil over high heat. Saute the garlic until aromatic; 2-3 minutes.
    4. Add the onions and salt and cook until soft; 3-4 minutes.
    5. Stir in zucchini and baby corn then mix well. Add the chilli bean sauce, oyster sauce, sesame oil, sugar and water; stir well.
    6. Bring the mixture to the boil and add the prawns. Stir then serve.


    Chilli bean sauce (toban djan) can be purchased in Asian speciality stores.
