Chilli Pork and Potato Stir Fry

    This is an easy and quick side dish or light meal that uses pork and potatoes, they are stir fried with a chilli accent coming from Szechuan peppercorns and green chillies.

    Serves: 4 

    • 1 tablespoon cooking oil
    • 500g potatoes, peeled and thinly sliced
    • 2 tablespoons cooking oil
    • 2 dried red chillies
    • 5 Szechuan peppercorns
    • 3 green chilli chillies, seeded and julienned
    • 100g lean pork, thinly sliced
    • 1 teaspoon soy sauce
    • 1/2 teaspoon rice wine
    • 2 spring onions, green and white parts separated, cut into 2.5cm lengths
    • salt, to taste
    • chicken stock powder, to taste

    1. Heat oil in a wok over high heat until hot. Stir fry the potatoes until soft. Remove and set aside.
    2. Heat oil in the same wok until hot. Stir fry the dried chillies and peppercorns until fragrant. Remove the chillies and peppercorns; discard.
    3. Add the green chillies and fry until soft. Transfer to a dish and set aside. Reserve the oil in the wok.
    4. Combine the pork with soy sauce, rice wine and white parts of the spring onion. Re-heat the oil and stir fry the pork for 2 minutes.
    5. Add the potatoes and chillies back into the wok and stir. Season with salt and chicken stock powder.
    6. Garnish with the green parts of the spring onions and serve.


    Szechuan peppercorns and rice wine can be purchased in Asian speciality shops or online.
