Easy Watercress Soup

    Watercress is not the first thing that comes to mind when you think soup but this simple combination creates a wonderful soup ideal for an entree at a dinner party.

    Serves: 4 

    • 25g butter
    • 1 shallot, diced
    • 75g fresh watercress, leaves only
    • 1 litre vegetable stock
    • salt and pepper, to taste
    • 1 dollop creme fraiche

    1. Heat the butter in a large saucepan over medium heat. Saute the shallot for 5 minutes or until brown.
    2. Add the watercress leaves and stir fry for 1 minute.
    3. Stir in the stock. Season with salt and pepper. Simmer for 15 minutes over low heat.
    4. Blend the soup with a hand blender.
    5. Serve with a dollop of creme fraiche.
