Coronation Chicken with Fruit and Nuts

This classic British concoction is a great sandwich filler as well as salad. Even better if prepared a day ahead.

Serves: 8 

  • 4 skinless, boneless chicken breast fillets - cooked and diced
  • 1 stalk celery, chopped
  • 1/2 onion, chopped
  • 1 small apple - peeled, cored and chopped
  • 50g sultanas
  • 50g seedless green grapes, halved
  • 50g chopped toasted pecans
  • 1/8 teaspoon freshly ground black pepper
  • 1/2 teaspoon curry powder
  • 175g mayonnaise

Preparation:15min  ›  Ready in:15min 

  1. In a large salad bowl combine the chicken, celery, onion, apple, sultanas, grapes, pecans, pepper, curry powder and mayonnaise. Mix all together, tossing to coat. Salad is ready to serve!

Used different ingredients. EXCELLENT!!!! When my daughter, mother and I tasted this our eyes rolled back into our heads-in a good way! It was light and refreshing. I didn't have apples so I just left them out. I substituted walnuts for the pecans and used red grapes instead of green. What a treat to have found this recipe. Thank you so much. - 08 Oct 2008


Used different ingredients. Delicious! I cheated and used the food processor to do most of my slicing (even the grapes) making this a cinch to prepare. I added about one tablespoon of honey which gave it a tasty sweetness. I'll make this dish again! - 08 Oct 2008
