Salmon Mousse with Crackers

    Smoked salmon in a goat cheese mousse layered in crackers. Makes an awesome fancy entree for your next special dinner party.

    Serves: 4 

    • 150g fresh goat cheese
    • 4 slices smoked salmon
    • salt and pepper, to taste
    • a few chives, diced
    • large round crackers, as needed

    1. Process the goat cheese and 3 slices of salmon in a liquidiser or food processor until smooth. Season with salt, pepper and diced chives.
    2. Spread the salmon mousse on several crackers and stack to form a mini-tower.
    3. Garnish with the remaining slice of salmon.


    Cut large circles from sheets of filo pastry, brush with butter and sprinkle with herbs/spices of your choice. Bake for 10 minutes at 180 degrees C. Use these instead of the crackers.
