Pan Fried Salmon with a Tomato Sauce

Salmon is pan fried to perfection then served with a tomato based sauce. Ideal for special dinner. Serve with pasta, mashed potato or rice.


Serves: 4 

  • 1 large salmon fillet, skinned, patted dry and cut into portions
  • salt and pepper, to taste
  • cornflour, as needed
  • 1 tablespoon oil
  • 1 tablespoon oil
  • 2 tablespoons finely diced garlic
  • 1 onion, sliced
  • 1/2 teaspoon salt
  • 1 tomato, diced
  • Sauce
  • 4 tablespoons tomato sauce
  • 75ml hot water
  • 125ml passata
  • 75g frozen corn kernels, thawed
  • salt, to taste
  • sugar, to taste
  • 2 slices Cheddar cheeses, diced, optional

  1. Sprinkle the salmon with salt and pepper then lightly dust in cornflour. Let sit for 10 minutes.
  2. Heat a large frying pan with oil over high heat. Sear the salmon on both sides then turn the heat down to medium and cook until 90% done; about 5-6 minutes total. Transfer to a serving plate.
  3. Heat the same frying pan with oil over high heat. Stir fry the garlic until aromatic; 2-3 minutes.
  4. Add the onion and salt, cook until soft; 3-4 minutes.
  5. Stir in the tomato then cook for 2 minutes.
  6. Sauce: Stir in the tomato sauce, water, passata, corn kernelsand season to taste.
  7. Bring the sauce to the boil, turn off the heat, sprinkle in the Cheddar and pour over the salmon.
