Chocolate Rum Truffle

    The perfect homemade food gift, truffles can be made by the old or young. Chocolate is mixed with creme fraiche, dark chocolate and rum.

    Serves: 12 

    • 250g dark chocolate (70%)
    • 100g butter, softened
    • 1/2 cup (90g) icing sugar
    • 1 tablespoon vanilla essence
    • 2 egg yolks
    • 100ml creme fraiche
    • 50ml rum
    • unsweetened cocoa powder, icing sugar or desiccated coconut, for rolling

    1. Melt the chocolate in a double boiler.
    2. Add the butter, sugar and vanilla then stir well.
    3. Remove from heat and gently stir the 2 egg yolks, creme fraiche and rum.
    4. Refrigerate for 3 hours. The mixture must be cold and semi-solid.
    5. Place a few tablespoons cocoa powder into a small bowl.
    6. Remove chocolate mix from the fridge and quickly roll into small balls. Roll in cocoa powder and repeat.
    7. Store in the refrigerator.
