Microwave Chilli Fish

    The microwave makes this so quick ans easy to make. The fish is covered with chillies and spices then cooked in the microwave for 6 minutes.

    Serves: 2 

    • 1 (350g) freshwater fish, cleaned and patted dry
    • 10g pickled red chillies, finely diced
    • 10g Chinese chives, finely diced
    • 1 teaspoon salt
    • 1 teaspoon chilli powder
    • 1/4 teaspoon cumin powder, divided
    • 2 tablespoons vegetable oil
    • 1 spring onion, finely sliced

    1. Stuff the fish with the chillies and chives.
    2. Rub the salt, chilli powder, 1/2 of the cumin and the oil all over the outside of the fish.
    3. Place the fish on a microwave safe dish.
    4. Set the microwave oven to the medium high power. Place the fish into the microwave and cook for 4 minutes.
    5. Take the dish out and sprinkle with the remaining cumin.
    6. Microwave for 2 more minutes or until the fish is cooked through and the flesh flakes easily with a fork.
    7. Scatter the fish with spring onions before serving.


    Chinese chives are also known as garlic chives. They can be found in Asian speciality shops.
