A very simple and quick Chinese prawn dish that lets you enjoy the prawns with only minimal flavourings. These come form ginger, chilli and rice wine.


Serves: 4 

  • 2 tablespoons vegetable oil
  • 1.5cm piece fresh ginger, sliced
  • dried chillies, to taste
  • 1kg raw large prawns, peeled, deveined, rinsed and patted dry
  • 2 teaspoons rice wine or to taste
  • salt, to taste
  • sugar, to taste
  • black vinegar, to taste
  • water, as needed
  • 2 spring onions, diced

  1. Heat the oil in a wok over high heat. Add the ginger and dried chillies then stir fry until fragrant.
  2. Add the prawns and stir fry until they turn pink.
  3. Add rice wine, salt, sugar and black vinegar and toss.
  4. Turn the heat down to medium then add a little bit of water and cook for about 2 minutes.
  5. Garnish with spring onions before serving.


Rice wine (sake) and black vinegar can be purchased in Asian speciality shops.
