Pork and Soy Bean Stew

    A simple Chinese standard - protein rich stew that is really easy to make with pork ribs and soy beans simmered until ribs are tender and beans are soft.

    Serves: 4 

    • 300g dried soy beans
    • 750g pork spare ribs, cut into 2.5cm lengths
    • 1 teaspoon salt

    1. Soak the soy beans in hot water for at least 1 hour until soft. Drain and rinse.
    2. Place the ribs into a saucepan and add just enough cold water to cover the ribs. Bring to the boil skimming off any foam that forms on the surface.
    3. Add the soy beans and cover the saucepan. Turn the heat to medium-low and simmer for 1 1/2 hours until the soy beans and ribs are tender.
    4. Season as required with salt. Serve warm.
