Stir Fried Pork and Tofu

    A simple Chinese stir fry this dish combines pork, tofu, capsicum and tomato in a tomato and soy based sauce. Serve with rice.

    Serves: 4 

    • 1/2 tablespoon sugar
    • 1 teaspoon salt
    • 1/2 tablespoon light soy sauce
    • 1-2 tablespoons cornflour, mixed with 1 tablespoon water
    • 450g pork fillet, diced
    • 1 tablespoon groundnut oil
    • 2 teaspoons black soy sauce
    • 2 tablespoons tomato sauce
    • 1 tablespoon caster sugar
    • 1/3 cup (75ml) water
    • 1 tablespoon groundnut oil
    • 2 teaspoons diced garlic
    • 1 shallot or small onion, diced
    • 1 medium onion, diced
    • 1 teaspoon salt
    • 1 green capsicum, diced
    • 400g firm tofu, drained and diced
    • 2 large tomatoes, diced

    1. Make a marinade by mixing together the sugar, salt, soy sauce and cornflour slurry. Mix in the pork, let marinate for 20 minutes.
    2. In a small bowl, mix together the black soy sauce, tomato sauce, sugar and water. Set aside.
    3. Heat a large frying pan with oil over high heat. Stir fry the pork until fully cooked; about 4-5 minutes, set aside.
    4. In the same frying pan, heat oil over high heat. Stir fry the garlic and shallot until fragrant; 3-4 minutes.
    5. Add the onions and salt, stir fry until soft; 3-4 minutes.
    6. Stir in the capsicum, tomatoes and the sauce. Heat through.
    7. Stir in the pork and tofu, mix, cover and simmer for 3 minutes. Serve.


    Black soy sauce is thicker and sweeter than ordinary soy sauce. It can be purchased in Asian speciality shops.
