Chinese Pork and Mushroom Soup

    This is a super easy, tasty and quick Chinese soup that starts by stir frying the pork, mushrooms and ginger before adding liquids to turn into a soup.

    Serves: 2 

    • 1 tablespoon vegetable oil
    • 1 teaspoon grated fresh ginger root
    • 5 fresh mushrooms, cut into 1cm thick slices
    • 50g cooked pork belly, thinly sliced
    • 1/2 teaspoons salt
    • water, as needed
    • 1/2 teaspoon ground white pepper
    • 1 spring onion, finely diced

    1. Heat the oil in a wok over high heat until hot. Stir fry the ginger, mushrooms, pork and salt. Continue to cook until the mushrooms are cooked.
    2. Add just enough water to make a soup and bring to the boil. Season with white pepper and spring onions. Serve.
