Prawn and Pineapple Fried Rice

Served in a hollowed out pineapple this is a wonderful fried rice that features prawns, pineapple, seafood sticks and capsicums.


Serves: 4 

  • Marinade
  • 1/2 teaspoon salt
  • 1/2 teaspoon white pepper
  • 1 tablespoon cornflour
  • 2 teaspoons sesame oil
  • 12 large prawns, peeled and deveined
  • Fried Rice
  • 1 small fresh pineapple
  • 1 tablespoon oil
  • 1 tablespoon diced garlic
  • 1 medium onion, diced
  • 1/2 teaspoon salt
  • 1/2 green capsicum, diced
  • 4 seafood sticks, diced
  • 2 tablespoons oil
  • 2 eggs, whisked
  • 2 bowls cooked rice
  • salt, to taste
  • 1 tablespoon fish sauce
  • 5-6 Thai basil leaves
  • 60g roasted cashews

  1. Marinade: Make the marinade by mixing together the salt, white pepper, cornflour and sesame oil. Toss the prawns in to coat, let sit for 20 minutes.
  2. Fried Rice: Meanwhile, slice 1/4 of the pineapple along the length, leaving the bulk of the pineapple attached to the leaves. Carve out the pineapple with a knife and then dice. Soak the pineapple in lightly salted water.
  3. Preheat the oven to 150 degrees C.
  4. Heat a large frying pan with 1 tablespoon oil over high heat. Stir fry the prawns until fully cooked; 3-4 minutes set aside.
  5. Heat the same frying pan with 1 tablespoon oil over high heat. Stir fry the garlic until fragrant; about 2-3 minutes.
  6. Add the onion and salt and cook until soft; about 3-4 minutes.
  7. Add the capsicum and seafood sticks then fry until the frying pan becomes dry; 2-3 minutes.
  8. Add the prawns back into the frying pan and stir to mix. Set the ingredients aside.
  9. Heat the same pan with 2 tablespoons oil over high heat. Stir in 1/3 frying of the egg and rice and stir quickly. Add some salt then stir in 1/2 of the egg and fish sauce. Mix well. Add the remaining egg, Thai basil, pineapple and all of the cooked ingredients.
  10. When well combined transfer to the pineapple boat.
  11. Bake the pineapple and fried rice for 10 minutes. Garnish with roasted cashews and serve hot.
