You don't need a deep fryer to create wonderful homemade chips. These fried diced potatoes are easy to make and a great side dish.
5 tablespoons oil
500g new potatoes, cut into 1cm dice
50g salted butter
salt, to taste
- Heat the oil in a large frying pan over medium-high heat.
- Add the butter. The mixture will bubble at first; when the foam dies down add the potatoes.
- Reduce to medium heat. Cook for 20 minutes. Do not stir. The potatoes will brown on one side.
- Drain the potatoes on paper towels. Season with salt to serve.
