    You don't need a deep fryer to create wonderful homemade chips. These fried diced potatoes are easy to make and a great side dish.

    Serves: 4 

    • 5 tablespoons oil
    • 500g new potatoes, cut into 1cm dice
    • 50g salted butter
    • salt, to taste

    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Heat the oil in a large frying pan over medium-high heat.
    2. Add the butter. The mixture will bubble at first; when the foam dies down add the potatoes.
    3. Reduce to medium heat. Cook for 20 minutes. Do not stir. The potatoes will brown on one side.
    4. Drain the potatoes on paper towels. Season with salt to serve.
