Season the tofu with garlic salt and white pepper. Let sit for 15 minutes then dust in cornflour.
Heat a large frying pan with 5 tablespoons oil over high heat. Fry the tofu until browned on both sides; about 4-6 minutes. Drain and set aside.
Heat the same frying pan with butter over medium heat. Saute the garlic until aromatic; 2-3 minutes. Reduce heat to low. Add the egg yolk and stir, turn heat off.
Gently stir in the tofu and egg whites. Garnish with spring onion and serve.
