Salted Egg with Fried Tofu

    Salted eggs are a little bit of an unusual ingredient that can be found at Asian shops, they go well with tofu in this traditional Chinese recipe.

    Serves: 4 

    • 400g firm tofu, cut into 8 pieces and patted dry
    • 1 tablespoon garlic salt
    • 1/2 tablespoon ground white pepper
    • cornflour, as needed
    • 5 tablespoons oil
    • 30g butter
    • 2 tablespoons finely diced garlic
    • 2 cooked salted eggs, whites finely diced and yolks mashed
    • 1 tablespoon finely diced spring onion

    1. Season the tofu with garlic salt and white pepper. Let sit for 15 minutes then dust in cornflour.
    2. Heat a large frying pan with 5 tablespoons oil over high heat. Fry the tofu until browned on both sides; about 4-6 minutes. Drain and set aside.
    3. Heat the same frying pan with butter over medium heat. Saute the garlic until aromatic; 2-3 minutes. Reduce heat to low. Add the egg yolk and stir, turn heat off.
    4. Gently stir in the tofu and egg whites. Garnish with spring onion and serve.


    Cooked salted eggs can be found in Asian speciality shops.
