Homemade Dijon Mayonnaise

    Homemade mayonnaise is actually quite easy to make and gives you the versatility to flavour it to your tastes. this one uses Dijon mustard.

    Serves: 8 

    • 1 egg yolk
    • 1 tablespoon vinegar, divided
    • 1 teaspoon Dijon mustard
    • extra-virgin olive oil, to taste
    • salt and pepper, to taste
    • vegetable oil, to taste

    1. In a deep bowl, mix together the yolk, 1/2 the vinegar and mustard.
    2. Season with salt, pepper and mix well. Slowly add the vegetable oil (almost drop by drop) whilst constantly whisking by hand.
    3. Once the mayonnaise begins to take in the oil, replace the vegetable oil by the extra-virgin olive oil. Continue to slowly add the olive oil and continuously whisk until smooth.
    4. When smooth add the remaining vinegar and whisk for 1 minute more.


    If the mayonnaise is too thick, add 1 teaspoon of warm water to make it lighter and less firm.
