These are a fun individual serve fruit cakes that are easy to make and full of sultanas, dates, almonds and spice.


Serves: 6 

  • 1 small lemon, zested and juiced
  • 1 teaspoon ground ginger
  • 100g dates, stones removed and diced
  • 2 eggs
  • 240g sultanas
  • 60g butter, softened
  • 1/3 cup (60g) dark brown soft sugar
  • 75g almond meal
  • 75g plain flour
  • icing sugar, for dusting

  1. Preheat the oven to 150 degrees C. Butter six ramekins or small cake tins. Set aside.
  2. Mix together the lemon zest, lemon juice, ginger, dates and sultanas. Let sit for at least 1 hour.
  3. Beat together the butter and sugar until light and fluffy.
  4. Add the eggs one at a time beating well after each addition.
  5. Stir in the flour, almond meal and soaked fruit.
  6. Pour batter into ramekins and bake in preheated oven for 1 hour.
  7. Let cool then dust with icing sugar.
