Stir Fried Pork in Tomato Sauce

    Pork mince is marinated then stir fried before being added to a rich tomato sauce with carrots and celery. Serve with rice for a filling meal.

    Serves: 4 

    • Marinade
    • 1/2 tablespoon sugar
    • 1 teaspoon salt
    • 1/2 tablespoon light soy sauce or 1 tablespoon dark soy sauce
    • 1-2 tablespoons cornflour mixed with 1 tablespoon water
    • 450g minced pork
    • Sauce
    • 4 tablespoons tomato sauce
    • 1 tablespoon caster sugar
    • 1/3 teaspoon salt
    • Stirfry
    • 1 small carrot, diced
    • 2 sticks celery, diced
    • 1 tablespoon groundnut oil
    • 1 tablespoon groundnut oil
    • 1 tablespoon finely diced garlic
    • 1 medium onion, diced
    • 1 teaspoon salt
    • 2 tomatoes, diced
    • 150ml water

    1. Marinade: Make the marinade by mixing together the sugar, salt, soy sauce and cornflour slurry. Mix in the minced pork, let marinate for 20 minutes.
    2. Sauce: In a small bowl, mix together the tomato sauce, sugar and salt to make the sauce. Set aside.
    3. Stirfry: Blanch the carrots in boiling water for 3 minutes. Add the celery and blanch for 1 minute. Drain well and put aside.
    4. Heat a large frying pan with oil over high heat. Stir-fry the pork until cooked through; 4-5 minutes. Set aside.
    5. In the same frying pan heat 1 tablespoon oil over high heat. Stir-fry the garlic until fragrant, 2-3 minutes. Add the onions with salt then cook until soft; 3-4 minutes.
    6. Add carrots and celery, stir well. Add pork, tomatoes and water. Stir, cover and simmer for 2-3 minutes.
    7. Stir in the sauce and serve.
