Lotus Root with Ginger Dressing

    Lotus roots look exotic and intriguing when served with this dressing they also taste beautiful, ideal as an entree for you next special dinner.

    Serves: 2 

    • 500g fresh lotus roots, rinsed and cut into thin slices
    • 1/2 teaspoon salt
    • 1 1/2 tablespoons sugar
    • 2 teaspoons vinegar
    • 1 spring onion, finely sliced
    • 2 teaspoons finely diced ginger

    1. Cook the lotus roots in boiling water for a few minutes until no longer raw. Drain into a colander set in the sink and cool under a cold running tap. Drain and transfer to a serving dish.
    2. Combine the salt, sugar, vinegar, spring onion and ginger in a small bowl; mix thoroughly.
    3. Drizzle over the sliced lotus roots and serve.


    Fresh lotus roots can be purchased in Chinese/Oriental speciality shops. If unavailable, use tinned lotus roots.
