Prawn and Avocado Salad with Youghurt and Tomato Dressing

    Ingredients
    Serves: 4 

    • 2 ripe avocados, stones removed
    • 100g cooked prawns
    • 2 tablespoons Greek yoghurt
    • 1 tablespoon tomato puree
    • a handful lettuce

    Directions

    1. Dice the avocados.
    2. Add the avocados and prawns to a medium bowl.
    3. Mix the yoghurt and tomato puree in a small bowl.
    4. Pour the sauce over the salad and mix well.
    5. Serve with lettuce on the side.
