Stir Fried Pork with Tomato Sauce

    Pork is briefly marinated before being stir fried then simmered in a rich Chinese style tomato sauce creating a succulent pork dish that goes well with steamed rice.

    Serves: 4 

    • Marinade
    • 1/2 tablespoon sugar
    • 1 teaspoon salt
    • 1/2 tablespoon light soy sauce or 1 tablespoon dark soy sauce
    • 1-2 tablespoons cornflour, mixed with 1 tablespoon water
    • 6 boneless pork chops, pounded evenly and cut into pieces
    • 1 tablespoon groundnut oil
    • Sauce
    • 3 tablespoons tomato sauce
    • 1/2 cup (125ml) water
    • 1 tablespoon groundnut oil
    • 2 teaspoons diced garlic
    • 1 medium onion, diced
    • 1 shallot, diced
    • 1 teaspoon salt
    • 1 tablespoon soy sauce
    • 3 tomatoes, cut into pieces
    • 1 tablespoon sugar

    1. Marinade: Mix together the sugar, salt, soy sauce and cornflour slurry. Mix in the pork, let marinate for 15 minutes.
    2. Sauce: In a small bowl mix together the tomato sauce and water to make the sauce. Set aside.
    3. Cooking: Heat a large frying pan with 1 tablespoon oil over high heat. Stir fry the pork until done; about 4-5 minutes. Set aside.
    4. Heat the same large frying pan with 1 tablespoon oil over high heat. Stir-fry the garlic until aromatic; about 2-3 minutes.
    5. Add the onion, shallot, salt and soy sauce then cook until soft; about 3-4 minutes.
    6. Stir in the tomatoes with sugar then mix well until soft; about 3-4 minutes.
    7. Add the sauce then stir and cover allowing to simmer for 2 minutes. Adjust the seasoning accordingly and serve.
