Mini Goat Cheese and Gruyere Pizzas

    Goat cheese and cooked capsicums are the topping for these tasty pita-pizzas. Serve as a light lunch, or cut each pizza into small wedges and serve them as party nibbles.

    Serves: 4 

    • 1 orange capsicum, seeded and diced
    • 1 red capsicum, seeded and diced
    • 150g goat cheese
    • 2 tablespoons olive oil
    • 2 yellow capsicums, seeded and diced
    • 30g grated Gruyère cheese
    • 4 pita breads
    • salt and pepper to taste

    1. In a large frying pan, heat the oil over medium heat. Lower the heat to very low, then add the capsicums to the pan. Cover and cook for 1 hour, stirring occasionally.
    2. Preheat the oven to 180 C.
    3. Place the pita breads on 2 non-greased baking trays. Spread with goat cheese. Season with salt and pepper, then add the cooked capsicums. Sprinkle with Gruyere and bake for 15 minutes or until the cheese has melted. Serve.
