This is a great use for dried tofu, also called pressed tofu and preserved tofu. Tofu is tossed with fresh coriander and spring onions in a sweetened soy-sesame oil dressing. Serve as a starter or side dish.
200g fresh coriander, cut into 3cm lengths
200g flavoured dried tofu, cut into 1cm thick slices
2 spring onions, chopped and fried
1 tablespoons light soy sauce
1 tablespoon sesame oil
2 teaspoons sugar
salt to taste
