Simple Cheese Soufflé

Souffle is actually simple to make, but requires a little time and attention as you will need to watch the soufflé whilst it's in the oven.


Serves: 6 

  • 30g butter
  • 3 tablespoons flour
  • 1 cup (250ml) milk
  • 200g grated Gruyere cheese
  • 3 eggs, separated

  1. Preheat oven to 180 C.
  2. In a medium saucepan, melt the butter then add the flour. Stir until the mixture starts forming a ball then slowly stir in the milk.
  3. Add the grated Gruyere, and cook on low heat for 5 minutes. Remove from the heat. Add the beaten yolks to the mixture.
  4. In a medium bowl, whisk the egg whites until stiff then gradually add them to the cheese mixture.
  5. Butter a large soufflé dish, add the mixture then bake in the preheated oven for 30 minutes.
  6. Serve immediately as the soufflé might collapse if you wait too long.
