    Scrambled eggs are given a kick with the addition of diced green chillies and tomatoes. A very warming breakfast or light lunch.

    Ingredients
    Serves: 2 

    • 2 tomatoes
    • 1 1/2 tablespoons cooking oil
    • 6 eggs, beaten until fluffy
    • 2 green chillies, seeded and diced
    • salt and sugar to taste

    Directions
    Preparation:15min  ›  Cook:5min  ›  Ready in:20min 

    1. Blanch the tomatoes and peel the skin. Seed and cut into 1cm cubes.
    2. Heat the oil in a wok or frypan over high heat. Pour in the beaten eggs and fry for a little while, stirring.
    3. Add the tomatoes and chillies; stir fry for about 2 minutes.
    4. Season with salt and sugar, mix well and transfer to a serving dish.

    Simple, quick and easy. I omitted the sugar and used garlic salt. - 12 May 2013
