    Different from a usual fruit-flavoured granita, champagne granita makes a delicious palate cleanser between courses.

    Serves: 4 

    • 1/2 bottle rose champagne
    • 2 tablespoons caster sugar
    • 2 tablespoons water

    Preparation:10min  ›  Cook:2min  ›  Extra time:2hours freezing  ›  Ready in:2hours12min 

    1. In a small saucepan, combine the sugar and water. Bring to the boil and boil till the sugar is dissolved.
    2. Allow the sugar syrup to cool, then add the champagne. Pour into a shallow container and freeze for 2 hours, stirring regularly. Serve in small dessert cups.
