    Chuck steak is simmered with mushrooms and carrots is the perfect dish for cold winter nights. Serve with potatoes and bread.

    Serves: 8 

    • 1 red capsicum, diced
    • 1 tablespoon herbes de Provence or mixed herbs
    • 100g tomato puree
    • 1kg diced beef chuck or skirt steak
    • 1kg tomatoes, diced
    • 2 onions, chopped
    • 2 beef stock cubes
    • 2 tablespoons olive oil
    • 4 carrots, sliced
    • 500g white cup mushrooms, sliced
    • salt and pepper to taste

    1. Heat the olive oil in a large frying pan until hot. Saute the onions over medium heat until tender, about 5 minutes.
    2. Add beef and fry for 5 minutes. Season with salt and pepper.
    3. Stir in mushrooms, carrots, capsicum, tomatoes, tomato puree, stock cubes and herbes de Provence or mixed herbs. Stir well.
    4. Cover and simmer over low heat for at least 90 minutes, stirring occasionally.
