    This recipe is great for your most recent fishing trip. I gave a trout to a friend and they served me this, lucky it is so easy to make; now I cook it too.

    Ingredients
    Serves: 3 

    • 1 fresh water trout, cleaned (fillet if wanted)
    • 12 water crackers, crumbed
    • 60g butter or margarine
    • 60g slivered almonds
    • 1/2 cup white wine
    • 1 lemon, juiced
    • 1 sprig of parsley, diced

    Directions
    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Wash the fish and while still damp place in the cracker crumbs to create a thin coat.
    2. In a large frypan heat a little of the butter and fry the trout for a few minutes on each side until cooked but not over cooked. Put on serving plate.
    3. Melt the remaining butter then add the almonds and gently cook until brown.
    4. Add the wine, lemon and parsley and stir quickly. Wait until the bitter alcohol smell has stopped then pour over the fish and serve.

    Tip

    I know butter is meant to be unhealthy but I think it gives a much better flavour than margarine.
