Bacon and Beans

    This is an easy and quick meal that can see me through the week. Not one for guests however.

    Serves: 4 

    • 1 onion, diced
    • 1 capsicum, diced, optional
    • 6 rashers bacon, diced
    • 1 (400g) tin baked beans
    • 1 (400g) tin corn
    • 1 dash Tabasco

    Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Gently heat the bacon in a saucepan until the fat starts to come out then add the onion and capsicum. Saute until cooked through (add extra oil if the bacon isn't giving enough).
    2. Add the baked beans and corn.
    3. Simmer until heated through, add Tabasco to desired heat.


    You can use any tinned vegetable(s) not just corn. Peas and carrots work well too.
