Pasta with Ham & Pine Nuts

    This is a quick and easy dish that is healthy and refreshing. It takes very little time to cook and the flavour is great.

    Serves: 4 

    • 4 serves spiral pasta
    • 1 large onion
    • 300g ham, diced
    • 415g tin diced tomatoes
    • 1 large zucchini, chopped
    • 1 capsicum, chopped
    • 2 Tbsp tomato paste
    • 1 Tbsp sundried tomato pesto
    • 1/2 Tbsp parsley
    • 1/2 Tbsp basil
    • 1/2 cup red wine
    • 125g pkt Pine Nuts
    • salt & pepper to taste
    • parmesan cheese, finely grated

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Cook pasta according to instructions on the pack, till al dente.
    2. Saute Onion till clear. Toss in chopped Ham and mix well. Add tinned Tomato, Red Wine and Tomato Paste. Bring to boil and simmer 5 minutes to reduce liquid.
    3. Add Zucchini and Capsicum. Simmer till vegies are just cooked. Add Basil, Parsley and Pine Nuts in the last minutes and add Salt & Pepper to taste.
    4. Serve over pasta and top with Parmesan Cheese


    Use fresh Parmesan and grate it yourself, it is so much better than the packet stuff!
