Chicken in Mushroom Sauce

    My other half loves this dish. This chicken and mushroom is great with rice or pasta or - if you slice the chicken it also can be used has a pie filling.

    Serves: 3 

    • 3 chicken breast fillets
    • salt and pepper to season
    • 1 tablespoon vegetable oil
    • 250g mushrooms, sliced
    • 1 garlic clove, sliced
    • 2 tablespoons flour
    • 300 ml chicken stock
    • 150ml cream
    • heaped teaspoon parsley
    • 3 tablespoons chicken juices mixed with the veg oil

    1. Season chicken then fry in the vegetable oil until cooked through - around 15 minutes, depending on size of fillets. Remove from pan using a slotted spoon and set aside on paper towels.
    2. Fry the mushrooms and garlic in the chicken juices for 5 minutes or until mushrooms are done to your liking.
    3. Remove from heat and stir in the flour, return to heat and fry for 1 minute.
    4. Gradually stir in stock and bring to the boil, turn down heat and simmer for 3 minutes.
    5. Stir in cream and mushrooms and heat through.
    6. Add parsley and serve with the sauce poured over the chicken.
