Chicken with Lemon, Garlic and Potatoes

A very tasty and easy dish. Chicken drumsticks baked with potatoes, herbs and lemon juice. Use any chicken parts, bone in or boneless.

Serves: 6 

  • 15 chicken legs
  • 8 potatoes peeled and cut into pieces
  • 1 cup olive oil
  • 5 lemons juiced
  • 10 cloves crushed garlic
  • 1 onion, minced
  • 2 Tablespoons dried oregano
  • 2 Tablespoons dried parsley
  • 1 Tablespoon dried tarragon
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 Tablespoons grated parmesan to garnish

Preparation:30min  ›  Cook:1hour  ›  Ready in:1hour30min 

  1. Preheat oven to 180 C
  2. Put half the oil in a large fry pan over medium heat and fry the potatoes until golden brown.
  3. Combine the rest of the oil, lemon juice, garlic, oregano, parsley, onions, tarragon, salt and pepper in a bowl and mix together.
  4. Put the chicken pieces and cooked potatoes in a baking dish, and pour the lemon oil and spices mixture over it all.
  5. Bake uncovered for about an hour, basting the chicken and potatoes with the juices in the dish.
  6. Dish it up and garnish with some grated parmesan

Serving suggestion

Serve with cooked green beans or asparagus when in season

Do not use 5 lemons. I cut back on them and it was still to much. I would suggest 2 at the most. The lemons just drowned out the rest of the flavours. I will try it again, but as I said, it will be with less lemons. - 03 Jun 2013
