Paula's Italian Pasta & Meatballs

    I LOVE my pasta and this is one of my favourite dishes. For me, the key to a great sauce is hours and hours of simmering.

    Serves: 4 

    • 300g pork mince
    • 300g veal mince
    • 1 cup breadcrumbs
    • 1 1/2 cups Romano cheese
    • 1 clove garlic
    • 2 eggs
    • 2 teaspoons salt
    • pepper
    • 1 cup vegetable oil
    • 1 onion
    • 1 cup tomato paste
    • 800g tin tomatoes
    • 1 cup Water

    1. Put mince, eggs, cheese, breadcrumbs, garlic, salt and pepper in a bowl and mix together with your hands
    2. Roll mixture into small balls (you can roll them into larger balls if you prefer) set aside
    3. Add oil, and onion to frypan and cook until onion is transparent Add the tin tomato (at this stage i usually blend the onion and tomato together - as a kid i never liked chunky sauce and its been a habit ever since) and add the water and tomato paste then turn the heat down to a simmer- i also add salt to the sauce now you can add the raw meatballs to the sauce
    4. In another pot bring water to the boil and cook pasta according to packet instructions

    Use for leftovers

    I know people who use their left over meatballs and sauce and use it in their pie maker the next night for dinner

    Yes sorry I will amend- meatballs (raw) go in the sauce and cook the entire time  -  13 Oct 2010


    The recipe leaves meatballs uncooked. An omission surely??  -  13 Oct 2010
