    Pebre is a wonderful Chilean condiment made of onion, garlic, chilli and herbs, often served with bread before a meal.

    Serves: 6 

    • 1 red onion
    • 2 garlic cloves
    • 1 fresh chilli
    • 1 bunch coriander
    • 1/2 bunch parsley
    • 1 lemon
    • 1/2 Cup olive oil
    • salt and pepper

    1. Roughly chop the onion, chili, garlic, coriander and parsley.
    2. Add these ingredients to a food processor, add the juice of the lemon, the olive oil, salt and pepper. Pulse until you get to the desired consistency. I like it chunky, but you can go really fine, or even a paste to use a dip.
    3. Serve with fresh warm bread.


    Salt, pepper and chili are all to taste, if you like it hot, go for some fresh habanero chilies!
