Roughly chop the onion, chili, garlic, coriander and parsley.
Add these ingredients to a food processor, add the juice of the lemon, the olive oil, salt and pepper.
Pulse until you get to the desired consistency.
I like it chunky, but you can go really fine, or even a paste to use a dip.
Serve with fresh warm bread.
Tip
Salt, pepper and chili are all to taste, if you like it hot, go for some fresh habanero chilies!
