    This is a Korean side dish known as 'Yeonkunjolim'. Lotus root is cooked in a sweet syrup flavoured with soy and sesame seeds.

    Serves: 4 

    • 300g lotus
    • 1 tablespoon white vinegar
    • 1/2 cup (125ml) water
    • 4 tablespoons soy sauce
    • 2 tablespoons corn syrup
    • 2 tablespoons caster sugar
    • 1 teaspoon sesame seeds

    1. You may buy already cleaned lotus roots in a packet. If not peel the skin off and cut into 0.5 cm thick slices.
    2. Put in a saucepan with water to cover and 1 vinegar then cook for 20 minutes to avoid bitterness. Drain in a colander.
    3. Put water in a saucepan then add soy sauce, corn syrup and sugar.
    4. Cook over medium heat for 5 minutes until sugar is dissolve then add the cooked lotus roots. Keep mixing until no liquid is left, it will take about 15 minutes. Turn off the heat.
    5. Add the sesame seeds, mix one more time then serve.
