This simply made Thai pork and glass noodle salad makes a great choice in a spread of Thai dishes.


Serves: 4 

  • 200g glass noodles, soaked in cold water for 10 minutes and drained
  • 100g pork mince
  • 4 cloves garlic, crushed
  • 1 onion, julienned
  • 10 Thai chillies, sliced thin
  • 2 stalks celery, diced
  • 2-3 tablespoons fish sauce
  • 2-3 tablespoons lime juice
  • 5 cherry tomatoes, halved
  • 2 tablespoons dried shrimp, fried until crispy
  • 1 handful of coriander, diced

  1. Briefly boil the pork in water until cooked. Pour the pork water over the noodles through a strainer thus heating the noodles. Reserve 4 tablespoons of the pork water.
  2. In a bowl mix the noodles and pork with the garlic, onion, chillies, celery, fish sauce, lime juice and tomatoes. If the salad needs more moisture add the reserved pork boiling water.
  3. Taste and add more fish sauce or lime juice as necessary. Serve with the coriander.
