Sweet potatoes are simmered until almost cooked then a sweet ginger syrup is created around them to serve in this unusual Thai dessert.


Serves: 4 

  • 400g sweet potatoes, peeled and cut into chunks
  • 4 cups (1 litre) water
  • 5 ginger slices, peeled
  • 220g palm sugar

Preparation:10min  ›  Cook:30min  ›  Extra time:30min soaking  ›  Ready in:1hour10min 

  1. Place the sweet potatoes in the water and soak for 30 minutes.
  2. Remove the sweet potatoes, heat the water to a boil then add the potatoes again.
  3. Add the ginger and cook the potatoes until they are tender. Add the sugar and dissolve.
  4. To serve; place the potatoes in individual bowls and spoon over the ginger syrup.
